My love for pistachios is no secret, and the pistachios in this healthy chicken salad add the perfect crunch to a longtime favorite. Any nut will work in this chicken salad recipe, so feel free to experiment to customize this delicious meal.
I love growing fresh herbs on my kitchen windowsill in the spring, so naturally, I love to think up new ways to incorporate them into our meals. One of Taylor’s favorite herbs is dill – he loves it in a Tzatziki sauce, in dill rice, and as part of any lamb-centric meal that I make (as dill is a staple in Persian cooking, I think it speaks to this side of his heritage). Sometimes, I can get in a little bit of a rut with serving lunch (since Taylor and I both work from home, our kitchen is very-well loved)! Re-imagining old favorites with healthy seasonal and fresh ingredients, like dill, is a fun way to get the job done and be creative with my cooking. We enjoy having this chicken salad for lunch over a bed of creamy butter lettuce and with a little bit of quinoa, and Taylor will sometimes have it as a sandwich with his favorite local hill country sourdough.
This chicken salad not only features dill, but also:
We hope you love it as much as we do!
